You've obviously never had to update another persons code, rather than work round all those tables and 's it's better to start again. So an update becomes a re-build meaning more time and more costs for the end user.
Plus you needs standards in anything you use or sell so why should web design be any different, just because it's relativlely new standards are a way of making people work towards the same goals in the same ways.

Cross Browser Compatibility for one, you code it the CORRECT way, you can almost assure not matter what browser or OS your on, each user has the same experience.
2nd, what toon said. God help you when you have to update a site that has 35 nested tables. AND i know your ONLY posting this to play the devil's advocate. And not because your code is shotty and can't be bothered to learn anything new.

My code is fine as i use DreamWeaver CS3, but i could use Serif WebPlus 10 (www.serif.com), see what you think.
