Select the layers, right-click, Merge Layers, then apply whatever adjustments you wish to make
Must be a really beginner's question but here it goes:
How to color adjust multiple layers in Photoshop?
When I select multiple layers the "Image -> Adjustments" and "Filters" menus are grayed out. If I convert the layers to Smart Object, then only "Shadow/Highlight" adjustment is available, but this is not what I need.
Is there a way around this?
Select the layers, right-click, Merge Layers, then apply whatever adjustments you wish to make
at the bottom of your layers pallette there is a circle with half white half black. Click on this and you can apply almost any adjustment on a separate layer that will apply the effect to any layer underneath. You can also mask sections out of the adjustment layer by painting black onto the layer if you don't wish to change a particular area. It also doesn't create any change to your original image, so you don't need to worry about wrecking your original image.
Easiest way for a newbie is
select all your layers, put them into their own group.
Duplicate the group and rename it "layers merged" and make the orginal group hidden by clicking the little eye icon
Go into the layers merged group, select all layers and merge them - then you can apply your color settings and you still have a back up of the orginal layers (un-merged) in the other group

What colour mode are you working in? I think some options are greyed out when not in RGB...
