For someone who knows nothing about architecture, are the graphics meant to stand for something? i.e. a tool or reference, code?

I wouldn't say they have a reference to the tools but i would say that they are a reflection of the designs that come out of the office.

In my personal opinion, I find the 2nd one the better out of the 3, but it needs more work, I think the text is a little too fine, and I think the logo needs some more, well, oomph!

Describe, in layman's terms, what a landscape architect does.

They design an illustrative plan of a variety of landscapes(community centers to cities), and create digital schematics in conjunction with architects and engineers to produce the final "blueprints" for construction.

Sorry if that isn't vary layman's terms essential they are responsible for the parameters of way that everything outside of the buildings look in a community, but main focus is on the drawing, like architects for exteriors

AS for them not being finished, I am still adding The Company name, so these aren't finished products.

I would use some keywords from there, and produce a logo from them...
e.g. landscape, schematic, blueprint, construction.....

Get a bit of paper and start some word associations based on what you've just told us.

Landscape, outside, plan and blueprint are good starting points.
