I assume alot of of them are screen-printed onto the t-shirts - therefore no need for the whiteback paper you get with DIY kits?

Screen printing. That's the best way.

Or if you're doing one off budget prints use latex. The place where I used to work do short runs with it and it's great quality.

All professional quality shirts are silk screened. There is a TON of info online about DIY silk screen projects. If you've got a bit of cash there's a lot of used silk screen equipment out there to be had.

I'm pretty sure they are done through screen printing. In high school (years back) I had to get a bunch of stuff made and I think thats how the customization place did it.

Erm, I'm not sure of the 'science' behind it, but you can buy packs of latex sheets (in the same way you'd buy photo paper) and they're like the printed equivalent of PNGs - anything that's white gets pressed transparent. They're pressed in a sort of industrial trouser press.
