How would you do that?

It's possible that most bot developers haven't bothered doing it, but searching for and processing ascii characters would be almost as easy as searching for normal email addresses so that's why i wouldn't rely on it. The trick has been around for years.

The email address is written in the source code sent to the user isn't it?
And besides, that's a contact form, not an email address written on the page or a mailto: link.

When i click on a mailto: link, gmail opens up a new email ready for me with the right address (and subject if specified).
